Welcome! When the weather is below 40 degree this girl is staying in! What better way to start a cold day in with a good hardy breakfast. Today I whipped up some waffles with a slight twist and some scrambled eggs and tea to follow.
As a nutrition student who enjoys good tasty food, I make it my mission to find ways to sneak in wholesome nutrition into common favorites like waffles. I used a boxed Belgian waffle mix, some frozen berries, and plain 'ol oatmeal to spruce up this recipe. Here's what I used and how I did it. Ingredients
1 cup Krusteaz Belgian waffle mix
1/2 cup Steel cut oats
3 Eggs
2 Tbsp Vegetable oil
1 Tbsp Granulated sugar
1 Tbsp Syrup
1 handful Spinach
1/4 cup Shrimp
1/4 cup Red onions
Seasoning
1 cup Frozen mixed berries
Equipment
Waffle maker
Whisk
Mixing bowl
2 Small sauce pan
Fork
Spoon
Directions
1. Follow the waffle directions as instructed on the box. Use half waffle mix and half oats.
2. Mix the batter and add 1/2 cup of frozen berries.
3. Lightly oil the waffle grill
4. Add the batter with berries to the warming waffle maker. Cook until one side is brown, then flip.
1. In a sauce pan add at least 1/2 cup of frozen mixed berries
2. Add 1 Tbsp of granulated sugar
3. Add 1 Tbsp of syrup
4. Use fork to mash fruit down in a reduction
5. Cook for about 5 min or so until bubbles appear
6. Serve warm on top of waffles
1. Add 1 Tbsp of vegetable oil to a sauce pan
2. Add 2 eggs, sliced red onions, and shrimp
3. Season eggs as desired
Serve with a cup of tea, coffee or hot chocolate! And enjoy.
